Dyersburg, TN – April 11, 2025–After more than three decades in the nursing profession, Susan Eaton traded her scrubs for street food with the launch of Hot Diggity Dog, a mobile food business serving up classic favorites. Eaton co-owns the business with partner and husband Mike Eaton. 

Founded in 2022 and based in Humboldt, Tennessee, Hot Diggity Dog is a West Tennessee favorite, with over 1K followers and excellent reviews. Offering a menu that features crowd-pleasers like gourmet hot dogs, nachos, and queso chicken—complete with all the fixins’—the Eatons have built a loyal following throughout the region.

“Our plate stays pretty full,” says Susan Eaton.Between prepping for events and traveling to different communities, their food truck keeps them on their toes—but they love it.

With a strong focus on excellent customer service and community engagement, the business has thrived over the past few years. Now, the Eatons are setting their sights on Middle Tennessee, with plans to expand their reach and bring their signature flavor to even more communities across the state.
